"Autumn Harvest"
It's mid October and the leaves are starting to change colors and withering down to the floor! Another season has ended while the next one slowly makes it's appearance! Autumn is one of my favorite seasons, the other Spring. The colors and the fresh crisp breeze seems so refreshing! Also it's the most festive time of the year to be creative with baked goodies and yummy dishes!
This past weekend I had the opportunity to enhance my little creativeness with some cupcakes! It was an order for BLD Autumn Dance.
I made 3 different cupcakes, Red Velvet with cream cheese icing , Chocolate with chocolate buttercream with sprinkled Oreos on top, and the last is a lemon flavored cupcake with lemon scented cream cheese icing.
Order for 130 cupcakes, took about 2 days to make and prepare! although it was a little hectic with my schedule, I enjoyed making them!
As more opportunities come along with orders and requests, the process of preparation becomes more easier. More and more I get more excited rather then nervous! I still get nervous though of the outcome and what kind of reviews I get! But it's ok, I'm still a beginner!
Anyways, wait for some pictures of the cupcakes here! ( sorry for the delay )

The conception of "Taste and See"
Hello my fellow friends and families! This post won't be the normal blogging of anything that I have made recently. This blog is actually an introduction to a new found idea (obviously)! It was yesterday afternoon that a conversation between a friend and I that brought to my attention, with love and passion behind anything a dream can be made into reality! For a few months now, an opportunity of baking and cooking have opened up for me and I enjoyed it! Although I lack some "culinary" skills and knowledge, I know the passion I have is real! So, maybe the day the words "Taste and See" was whispered in my ear was also the beginning of what God has in store for me!
I have to admit, I was excited and motivated to pursue and work at this new found passion! Its actually one of my dreams that one day will potentially be a reality! "Your prayers reveal how serious you are about your goals. If you don't pray about them, you really don't care about them that much." Those words that I read from one of my daily emails, gave me the motivation and the urge to step up and take the risk! With a lot of prayers, I have no doubt that the only support I need is from up above!
My plan is to start slow! For now its all about networking myself and also "perfecting" my work at the same time! I enjoy trying out new recipes and coming up with new ideas! Eventually I'll have more variety of dishes to offer! I'm not just limiting myself to food and catering, my vision for this company is to build a "one stop shop" kind of deal! From catering, to desserts, to also event planning! So yes, my target is for those who LOVE to entertain and throw events, or ones who are limited with ideas and/or time. Growing up, I have watched my parents throw events left and right. One thing I never appreciated was, being a host to your own party didn't give you that opportunity to enjoy your own event! So the idea of hired help comes into play! Some may have their reservations behind event planners or hired help but at the end, I would want you as the host, to feel like "one of the guests" at your own event!
Planning a huge event, such as my wedding, also awakened my inner passion for entertaining and event planning! A day that every girl dreams of turns into a dream come true! I know that all brides-to-be have their moments when they want to just rip their hair out! Why not look for help? For now, I'm not offering a wedding event but let's start small! =p Let's start with maybe the engagement party, or the bridal shower, or maybe a groom's shower? Ideas and options are unlimited!
So yes! I can now introduce to you a new found passion, a brand new baby that we are all waiting for to develop! For now, conception has happened and we're still in the first trimester! Let's all hope and pray that the next couple of months will be a fruitful and healthy development of "Taste and See." Thank you all in advance and for your support!

Sweet Success!
So this past weekend I was able to make a few new desserts!
A cake order for a Lemon Cake with Strawberry filling was for my sister - in - law's father-in-law's 80th birthday! (did you get that?) So I searched for a lemon cake recipe and some sort of strawberry filling. I came across a recipe for "Lemon Buttermilk Cake" and another recipe for "Strawberry Mousse". Together made a very yummy cake! The icing was a cream cheese icing!
Below are some pictures of the cake. We personally delivered the cake to the celebrant and was able to share some slices with him! Happy Birthday Pop Pop... to another 80 years!





Saturday evening was a dinner with the siblings and cousins at the cousin's place! Below are the pics of the desserts we had as well! I tried this idea I saw I think at the Food Network and also a recipe article in a magazine! Its a Semi home made ice cream cake!
I combined and layered 2 different types of Ben & Jerry's ice cream, Cookie Dough and Heath Bar Coffee! YUM! At the bottom and also in between I laid down some crumbled oreo cookies which made it into "cake crunchies" for all you ice cream cake lovers! I love extra crunchies so of course.... thats exactly what I did! Put EXTRA crunchies! =D Another recipe I wanted to try out was "Apple Zeppoles" The taste came out fine but I think I over did ( or should i say didn't measure correctly) on the apples! I doubled the apples compared to the batter requested on the recipe itself. It made the zeppoles very dense and gooey inside and not fully cooking it! After some "surgery" on the recipe, they turned out ok!

Ingredients
1 large apple, peeled and grated (about 1 1/2 cups)
1/4 cup sugar
1 stick butter
1/4 teaspoon salt
1/2 cup water
1 cup flour
4 eggs
1 cup whipping cream
2 tablespoons confectioners' sugar, plus more for dusting
1 teaspoon cinnamon
Olive oil for frying
Directions
In a medium saucepan combine the butter, salt, sugar, and water over medium heat. Bring to a boil. Take pan off the heat and stir in the flour. Return the pan to medium heat and stir continuously until mixture forms a ball, about 3 to 5 minutes. Transfer the flour mixture to a medium bowl. Using an electric hand mixer on low speed, add eggs, one at a time, incorporating each egg completely before adding the next. Beat until smooth. Add the grated apple and stir to combine. If not frying immediately, cover with plastic wrap and reserve in the refrigerator.
Combine the whipping cream, 2 tablespoons confectioners' sugar, and cinnamon in a
medium bowl. Whip until medium soft peaks form. Transfer the whipping cream to a serving dish.
Meanwhile, pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 325 degrees F.
Using a small ice-cream scooper or 2 small spoons, carefully drop about a rounded tablespoon of the dough into the hot olive oil. Turn the zeppole once or twice, and cook until golden and puffed up, about 4 minutes. Fry the zeppole in batches so as not to overcrowd the pan. Drain on paper towels. Transfer the zeppole to a serving dish and sprinkle with powdered sugar using a small sieve. Serve with the cinnamon whipped cream alongside for dipping.

Baked Red Snapper...
I wish I was more creative when it comes to making up titles for my new posts! hahaha O well.. its ok!
Anyways, another day, another chance to eat! haha So for dinner tonight is baked Red Snapper! I saw a very simple recipe online and just altered it a little bit. The recipe calls for grilling, since we can't grill in our apartment I'll be baking it instead!
Ingredients:
Medium size Red snapper
olive oil
garlic cloves
fresh rosemary herbs
lime juice and a few lime slices
fresh ginger
Very very simple to make folks! Dice up the garlic, ginger and some rosemary leaves. Prepare the fish by cleaning and taking the scales out ( if its not done already.) Make 2-3 cuts along the middle of the fish to make some pockets. Drizzle some olive oil all over the fish and place in a baking pan. Then rub all the diced up ingredients ( garlic, ginger, and rosemary leaves) throughout the fish and as well as inside and in the slit pockets you made. Tear about 2 bunches of Rosemary leaves and scatter it on top of the fish for more flavor. Then throw it in the fridge until ready to bake!
Bake at 375 degrees for about 25 mins ( also depending on how big the fish is you will need to cook less or more time)
As a side dish or replacement of rice, I experimented on Quinoa ( here is what it is for those who don't know what it is. http://chetday.com/quinoa.html ) I had it once at my cousin's house and she said it was a healthy substitute for pasta or rice. I sauteed some onions and diced up some carrots until its soft. Then add 1 cup of Quinoa (soaked in hot water for a few mins prior to cooking) and 2 cups of water. Cook for about 20 mins until fluffy. Add a little butter to jazz it up a little! =)
I'll post up the finished product later on tonight! Enjoy!

Rainbow cupcakes!
So my younger sister, who just turned 17 this week requested these for her little get together with her friends tonight! Haha Rainbow Cupcakes! I thought it was actually cool when I saw some girl on youtube make these cupcakes. In the video they used boxed ready mixed white cake as their base and just added the desired color to the mix.
This was my first time making them so the color and measurements were not really exact. I used my Red velvet cake recipe to make these cupcakes since I needed to add color anyways =) . I used 4 different colors ( Red, Yellow, Blue, and Green) and just layered them one by one. For the icing I had left over cream cheese icing from my previous red velvet cupcake order so I blended some on a buttercream icing.
Here they are! =)

Healthy Eats
Sauteed beef with peppers and onions and tofu!
Easy, fast, and healthy! First sauté the onions till soft and brownish then add the peppers. Next add the beef and saute for a few mins. along with the peppers and onions. Set aside in separate dish for later use. Lately I have been using peanut oil which gives the food a little more taste! Now saute the tofu till brown. Add the remaining ingredients together and saute all together. Season with a few tablespoons of oyster sauce and black pepper! Ready to serve!
Grilled chicken breast with Whole wheat pasta! ( Asparagus, mushrooms, and zucchini with lime juice)
